Apple Cinnamon bread

Things you will need Warm Water, Salt, Oil, 2 Medium Pie apples chopped, Unbleached Bread Flour, Cinnamon, 3tbl. Softened Butter, White Sugar, Brown Sugar. Bread pans, cooking spray


Bread                                                                        Cinnamon Crumb Mixture

51/2 c flour                                                                         3 tbl. softened butter
2tbl. yeast or 3 pkgs.                                                     1 tsp. cinnamon
2c warm water                                                               1/2c flour
1/4c oil                                                                           1/2c brown sugar
1/2c white sugar
2 mediu, chopped apples


Place yeast., white sugar, oil and salt into the warm water, add flour until you have a very wet sticky dough. I did this after 3c flour now add the chopped apples.  Continue to add flour until the dough is soft and stretchy .  If using a bread hook the ,ixture will pull away from pan. If doing it by had you will want the dough a tad sticky.go ahead and add the last 1/2c flour even if it is pulling away from bowl so it will not be to sticky

Continue to add flour till the dough pulls away from the sides.  If your doing it by had the dough should be soft and slightly sticky.

I place my dough in a large covered casserole dish
spray with cooking spray or brush with oil
While dough is rising you can get your crumb mixture ready. Place your butter, cinnamon, flour, brown sugar in a bowl
Some use pastry knives. I prefer my hands, I use latex gloves/surgical gloves
Work the mixture until crumbly. If you have ever done crumb topping
for pie or a cake that iswhat this mixture is. The only extra ingredient I used was cinnamon.
You can also use pumpking spice.

Dough has doubled before you pull it out of it's container, sprinkle the top with flour; also sprinkle flour on your work surfice so the dough will not stick; sprinkle flour as needed as you roll it out.
 

Now that the dough is double lay it out and press down so you may divide the dough in half.

start at one end and start to roll it to make the loaf
round log will form
tuck in both ends then place them into bread pans
Cover with damp towels until doubled
preheat oven to 375

 Place in preheated oven 375 for 35-40 minutes . You know it is done when you place a meat thermometer reads 190 degrees.
