tips on thawing frozen loaves

This first way is good if you want a warm loaf for dinner
Pull frozen dough from freezer and place it in fridge. I did this the night before I was going to make the loaf.

By morning the dough had actually risen.

Preheat oven to lowest temp 170.


Oil a stoneware or glass bowl, and the bread pan you'll be using to bake the loaf in.

Place the bowl and the bread pan into the preheated oven.

Once the oven reaches temp turn the oven off.

Take dough out of bag, place in warmed bowl. You can either use damp cloth or oiled plastic wrap and loosely place over bowl. Place bowl back in oven to rise double. Leave the bread pan in the oven to stay warm.



 OR---- PULL FROZEN DOUGH FROM FREEZER LEAVE IT IN THE BAG OR CONTAINER YOU FROZE IT IN.PLACE ON COUNTER;  NEXT MORNING FORM YOUR LOAF> WAIT 45 MIN. SET OVEN 375 DEGREES ONCE OVEN IS UP TO TEMP PLACE LOAF ON MIDDLE RACK FOR APPRX 45 MIN.  YOU KNOW IT IS DONE WHEN A THERMOMETER READS 190 IN CENTER.

Once the dough doubles in size, remove it from the bowl and form it into a loaf. Place formed dough in bread pan that had preheated in the oven. Place the damp cloth (or the oiled plastic wrap) loosely over the loaf that is now in the bread pan.




Put the covered loaf back into the warm oven and let rise until doubled.

pull loaf out of oven and keep it covered while you preheat oven to 400.

Once it reaches temp score and egg wash loaf and place in oven for 20 minutes. Turn oven down to 350.

Check for doneness after 10 min. You know it is done when a thermometer reaches 190. If it isn't 190 degrees, check again in 5 minute intervals.




using sharp knife or sissors cut slits on top of
loaf and brush with egg wash



whip the eggs like you are makin scramble eggs
add 2tbl. water into eggs
